Nutritional Services at MVH CT and MVHDJJ

The Contractor will provide all on-site nutrition-services operations for MVH CT and MVHDJJ, including food preparation, meal service, procurement of all food and supplies, staffing, training, and compliance with all applicable federal, state, and accrediting-agency regulations. The Contractor is responsible for hiring, training, and managing all personnel needed for on-site operations. At MVH CT, the service model is decentralized household-based dining; at MVHDJJ, it is a centralized trayline service model, with a planned transition to a household-style model during the contract term. The Contractor must provide three meals per day, seven days per week, a minimum five-week cycle menu, and support a full range of diet types. The Contractor must also operate the Bistro at MVH CT and provide catering services. The contract includes a transition-in period, ongoing operations, and a post-contract transition-out.
