The contractor must supply one reach-in blast chiller/freezer meeting the specified salient characteristics, including blast chilling, shock freezing, cold holding, frozen holding, thawing, proofing, regenerating, chocolate melting, pasteurization, dehydrating, low-temperature cooking and automatic chilling, freezing, and hot holding. The unit must have a capacity of nine 19" x 26" sheet pans or eighteen 12" x 20" x 2.5" steam table pans, with rapid blast chill capacity of 110 lbs from 194°F to 37°F in approximately 90 minutes and rapid shock freeze capacity of 110 lbs from 194°F to 0°F in approximately 4 hours. Features include USB HACCP data transfer, automatic cold/frozen holding, touch pad controls, temperature probe, automatic sanitation system, self-contained air-cooled condensing unit, four stainless steel wire shelves, 6" stainless steel adjustable legs, AISI 304 stainless steel internal and external material, R290 propane refrigerant, ETL and ETL EPH certification, removable condensation tray, dimensions 74"(H) x 40"(W) x 49"(D), power source 208V/60/3-ph, two-year parts and labor warranty, and five-year compressor warranty. Delivery must be coordinated with Beth Bova of BOVA Corp., and the contractor must provide descriptive literature, an authorized distributor letter, and comply with all delivery coordination requirements.
